Macarons
What are the ingredients in your macarons?
Our macarons are composed of Italian meringue (sugar syrup and egg whites), almond flour, and icing sugar. Fillings are mostly flavoured buttercream (meringue and butter) or chocolate ganache for our sweet macarons. Our savory choices use flavoured cream cheese and other types of cheeses.
What are the potential allergens in your macarons?
All macarons contain the following allergens: eggs and almond. All of our macarons are made with almond flour and some of our fillings contain peanuts. While peanuts are not a part of our basic recipe, certain amounts of nuts or nut oils may be present in our products.
We always have at least one dairy-free macaron flavour available and any macaron flavour on our menu, including dairy-free, can be ordered in advance.
Some of our macarons use food colouring and some are coloured with natural ingredients only.

Do you have gluten-free macarons?
All our macarons are naturally gluten-free and none of our products contain gluten. However we cannot guarantee that there are no traces, as our supplier carries products with gluten.
How long do macarons last?
Sweet macarons are good for 2 - 3 days in the fridge, and 3 - 4 weeks in the freezer. Savoury macarons last 1 - 2 days in the fridge and 1 - 2 weeks in the freezer. The best way to keep macarons fresh is to freeze them - it's actually part of the baking process! We ALWAYS put our macarons in the freezer for 24 hours before selling them, because it gives them their signature soft and chewy texture. Macarons can be thawed and refrozen multiple times. Do not leave macarons outside of a fridge or freezer overnight, or else they will go stale/soft. When freezing macarons, we recommend putting them in a well sealed tupperware container, or saran-wrapping the box they came in.

Are classes refundable?
Class registrations are non-refundable but can be rescheduled once as long as we are given 7 days of notice.

Events
Do you offer custom macarons?
Yes! We offer custom colours and printed macarons. For custom colours and printing, we have a minimum order of 100 x pieces and 2 weeks notice. For logo printing, we require a high quality png file with a transparent background. We generally print on white/light colour macaron shells with dark/vibrant colours.
We also offer smaller customizations such as added decorations/adjustments to macarons from our regular menu. Contact us by email for all custom orders.

How long in advance should orders been placed?
The longer the better! For customized orders (printing, custom colours) we require a minimum of 2 weeks notice. Large orders over 200 require one week notice.
What is the recommended serving?
We recommend 2-3 macarons per person, about the same size as an individual cake from a bakery.
Wholesale
Can you do custom macarons exclusive to one company?
Yes! With enough volume we can partner up and create a macaron that will be exclusive to your company.
Do you have a minimum order?
We do not but recommend to order in increments of 35 as it is the size of our clamshells. You also get free delivery for orders over 500 macarons!
How far in advance should orders be placed?
We usually require a two weeks notice but will do our best to accommodate last minute orders.
Pick up & Delivery
Do you deliver?
Only for wholesale account. For individuals, we partnered up with Uber Eats.
Where are orders picked up in Vancouver?
Orders are to be picked up in the Granville Island Public Market. You can pick up your order at any time during opening hours.
